5+ Easy Ways To Use a Rotisserie Chicken

I love reading foodie blogs that give me ideas on quick meals, sometimes I’m not that creative in the kitchen and need a little inspiration. I like to have something in my fridge at all times that I can grab quickly for lunch, or even better, something I can pass off for dinner ha! I love to cook, but it comes in waves for me, so if I’m on an off month, the fam better be ready for frozen pizza, sandwiches, or soup.

Years ago a coworker of mine let me in on a little secret. We were all bringing a dish to work and she happened to bring chicken salad, one of my all time favorite dishes. I told her how impressed I was that she took the time and boiled chicken for the salad. She quickly informed me with, “Girl, I used a rotisserie chicken honey – I’m a lazy cook”. I was so impressed LOL!

Not too long after that, I tried it and to my surprise, my family had no clue I didn’t go the traditional route. A win for me! I use a rotisserie chicken for wraps with some veggies and of course, sandwiches during the week for a quick lunch. Plus it’s an easy go-to while I’m doing FASTer Way To Fat Loss. (New round is coming up on 11/11 btw). If you are in a hurry you can toss a little Buffalo Sauce on pulled chicken and it makes a GREAT wrap with a little Ranch dressing (eat that on high fat days!).

The best rotisserie chicken I have tried was from Costco, but it is a haul to get to the nearest one, so I usually pick up a couple from my local Walmart. I try to eat salads a few times a week and I can get some protein to hold me over with the chicken, plus I love using Green Goddess dressing from Trader Joe’s.

    I love using them in casseroles… I’ll mix the chicken broken into small pieces with the cooked penne pasta, a can of cream of chicken soup, cut up broccoli, a big spoonful of sour cream, a small amount of minced garlic, and shredded cheese and put it in a baking dish, top with shredded cheese and then French fried onions on top of that and bake for about 20 min on 350-375. This would need to be on one of those high fat days too LOL!

    I don’t have easy access to a rotisserie chicken but love your suggestions. I use my Instant Pot when I need chicken quickly so kind of the same thing except I have to wash the pot!! But…the rotisserie would also be very quick for chicken noodle soup. I am same as you in that it has gotten harder to come up with meals even for just the two us and I hate coming up with ideas for lunch and supper. Maybe you can get ideas from each family member for at least one meal a week to help figure out what to have!?!? Have a great day.

      I am on the edge about an Instant Pot. Do you really like it? I’ve been thinking about one for almost a year but haven’t seen anything I think I might like -well I’m clueless about what I’m getting lol. Chicken noodle soup is an EXCELLENT idea!!!         Beverly…yes I really like my Instant Pot! I have a 6 qt. one and I think it’s a perfect size..not too big, not too small…just right !!! If it wouldn’t have been for our son making me get it out of the box and use it, it would probably still be in there but he gave it to me and showed me how to get started. Makes great boiled eggs. Love it for casseroles…love it to boil pasta…sometimes I go in spurts with how much I use it but I use it ever week for sure!

          I am glad you said this! I think I will start researching them, what kind do you have? I may have to get Chase to help me too LOL!!! I see recipes for the Insta Pots all over Pinterest, so I have been very curious.

    Because of my many dietary needs I can’t buy store bought rotisserie chicken and use it. I have to cook my own food from scratch. I will however, look over these recipes and pass them on to my two daughters to use for their families so thank you! Yesterday, I put a whole chicken in the slow cooker and then made a chicken veggie soup. I have left over chicken that I can make a chicken salad with or just to use on top of my green salads. I don’t mind cooking at all but I absolutely detest having to be the only person to come up with the meal ideas!! I figure that if I am doing the cooking and cleaning up after, at least someone else can come up with the ideas once in a while. I went to the doctor today and got the diagnosis that I have not only Influenza type B but also strep so no wonder I feel so horrible. I don’t work again until Tuesday morning so hopefully I will be feeling better by then. Hope you are having a great day!

      Oh my gosh Kelly, that’s terrible. I still am feeling horrible, I haven’t been to the dr for me yet. I’ve been shuffling mom back and forth the past few days.
