Sloppy Joe Tater Tot Casserole
- 1 lb Browned Ground Beef
- 1/2 Sweet Onion Diced or minced
- 1 tsp garlic, minced
- 1 Red Bell Pepper, diced
- 1 Can of Corn, drained
- 1 24oz. Can of Sloppy Joe sauce
- 4 Tbsp Cream Cheese
- 2 Cups Shredded Cheddar Cheese
- 1 bag 32 oz. Frozen Tater Tots
- Salt and Pepper to taste

Brown ground beef and in the same pan, sauce onion and garlic until translucent.
Add red bell pepper and corn until soft
Combine beef, onion and garlic mixture and stir in sloppy Joe sauce and cream cheese. Salt and Pepper to taste.
Simmer over Medium Heat for 5 minutes
Pour mixture in 9×13 baking dish, spread evenly
Top with a layer of shredded cheese (1 cup)
Arrange tater tots on top and sprinkle remaining cheese
Bake at 450 degrees for 20 minutes or until tater tots are crispy and golden
