BBQ Chicken Tostadas
I put 4 chicken breasts in a crock pot and cooked it for 4 hours on high for my chicken, or you can boil chicken, then shred it. You can also buy Rotisserie Chicken and shred that, Will take at least 2 of those.
- 8 Tostada Shells
- 3 cups cooked chicken
- 1 1/2 cups favorite BBQ sauce
- 2 cups shredded cheese
- 3 green onions finely chopped
Preheat oven to 350 degrees. Lay out the tostada shells on baking sheets. C combine the chicken and 1 cup of BBQ sauce in a small bowl and stir to coat. Divide the chicken between the tostadas shells and top with the cheese. (about a 1/4 cup) Put in oven for 8-10 minutes (or until cheese is melted and shells are crisp on ends). Remove from the oven and and drizzle remaining BBQ sauce. Sprinkle with green onions if desired. Can top with sour cream also.
Secret Chicken Casserole
- 4-6 boneless chicken breasts
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 stick melted butter
- 1 8 oz Pepperidge Farm Herb Stuffing Mix
- 2 cups chicken broth
Boil chicken until done. In large bowl mix soups, broth, butter and stuffing together. Shred chicken or cut up in bite size pieces and mix into soup mixture. Pour into an uncreased casserole dish. Bake at 350 degrees for 35 minutes.
Easy Baked Ziti
makes 2 8×8″ dishes or one 9×13″ dish
I used 2 disposable 8×8″ pans, as it makes for easier clean-up. You can freeze one.
- 1 16 oz. box mostaccioli or penne noodles
- 1 jar spaghetti sauce
- 1 pound cooked hamburger
- 1 16 oz. container ricotta cheese (optional)
- 1/2 c. sour cream
- 2 c. shredded mozzarella
Boil noodles a few minutes less according to box directions, you want them still a bit firm since they’ll continue to cook in the oven. While noodles are boiling, brown up the hamburger. Add the spaghetti sauce to the pan. Let cool a bit. In a big bowl, mix together the spaghetti sauce mixture, the ricotta, and the sour cream. Dump in the noodles & toss thoroughly to coat. Lightly spray your desired pan(s) and add the noodles, dividing equally if using two pans. Top with shredded cheese. If you’re baking it now, pop it in at 350° F for about 30 minutes or until cheese is melted and edges are bubbly. Otherwise, cover with plastic wrap, then aluminum foil and put it in the freezer til needed.
Best Baked Spaghetti Recipe
1 1/2 lbs. of hamburger
8 oz. spaghetti
32 oz. spaghetti sauce
1 cup of milk
8 oz. Shredded mozzarella
8 oz. mild shredded cheese
optional ( you can add mushrooms and diced tomatoes)
Cook spaghetti according to directions on box. Brown hamburger meat and drain. Mix meat into spaghetti sauce, combine with spaghetti noodles. Add milk, cheese (leave out about 1 Cup of Cheese for topping), and mushrooms. Mix well and put in a 9X13 inch pan or casserole dish. Sprinkle top with the remaining cheese. Bake @ 350 degrees for 30 minutes.
Easy Pasta Bake
1 lb. mild sausage
1 cup shredded mozzarella cheese
2 cups of penne or rotini pasta, cooked and drained
1 10oz. package of baby spinach
1 can (14 1/2 oz.) Italian Style diced tomatoes (undrained)
Cook pasta per directions on box. Brown sausage. Drain. Add Spinach and can of tomatoes and cook till spinach is wilted. Remove from heat. Drain pasta and add to meat mixture and cheese then toss all together. Cheese should melt some. If desired add more cheese on top. If more melted cheese is desired put in oven and bake at 350 degrees until cheese is melted.
Homemade Chicken Pot Pie
2 refrigerated pie shells. 2 12 oz. cans of Tyson Chunk Chicken
2 cans of Veg-all drained 2 cans of Campbell’s Cream of Chicken soup
Mix all together.
Put one pie shell in a 9inch pie plate then add mixture. Place the second pie shell on top and crinkle around the corners to form pie. Cut 4 slits in top of pie shell. Bake @ 375 degrees for 45 minutes or until golden brown.
