Easy Crock Pot Tortellini Soup

I haven’t shared a recipe or lifestyle post in a long time, so I am overdue! Honestly, I have not made a recipe my family loved enough to share until now. If you know me, you know that I am all about quick and easy. If it has more than 6-8 ingredients, you have lost me, and I move on to another recipe. I started making this a few years ago, and my family has not stopped asking for it, so buckle up…this one is simple, and easy, and your family is going to think you spent all day preparing their meal.

When your kids rush to the table to eat or get upset because you are cooking this and they’ve made plans, or everyone starts fixing their lunch for the next day before you have had a chance to eat – you know it’s GOOD!

If you like spinach, feel free to add it in and experiment. I add a 10-oz. bag (3-4 cups) if the kids are not going to be at home. They are not big fans of spinach, but I love it in the soup. I add the spinach when I add the tortellini in and cook it for about an hour in the crockpot open high.

The sauce in this soup is close to a vodka sauce and tastes oh-so-good! If you like tortellini, I promise you will want to Pin this one and keep returning to it. I hope you enjoy it!

Ingredients

  • 1-lb sausage (you can use your favorite, we used great Value Mild Sausage)
  • 1 (32-oz) container of chicken broth
  • 1 (28-oz) can of petite diced tomatoes
  • 2 (10.75-oz) cans of tomato soup
  • 2 (8-oz) containers of chive and onion cream cheese spread, softened
  • 1 (18-oz) packaged refrigerated cheese tortellini, uncooked

Instructions

  1. In a skillet, cook the sausage until browned and no longer pink. Transfer cooked sausage to slow cooker.
  2. Add chicken broth, tomatoes, and tomato soup to slow cooker. Cover and cook on LOW 6-8 hours OR on HIGH for 3 hours
  3. Stir in cream cheese and cheese tortellini. Cover and cook on HIGH for 30-45 minutes, or until tortellini is cooked.

**I served it with a salad and Texas Toast.

    I make a different version of sausage and tortellini soup in the Instapot and it’s delicious, but I’m intrigued by the chive and onion cream cheese you mention–it sounds amazing! I’m definitely going to give this a go. Yay for winter soups.

    Bev’…I make a tortellini soup as well, that my family loves!!! My base is little different, but it hits the spot everytime.
    Yumm! I add spinach to ours as well and it’s great. I cook mine with mini turkey meatballs, spinach and cheese tortellini and a big frozen pack of spinach, serve it with grilled cheese (two types of cheeses) on thin organic bread and it’s soooo good. Lol. Thank you for posting, seeing this made me want to pull some meatballs out of my freezer. When I make spaghetti, I roll out meatballs while the meat sauce is simmering and freeze them for my later!! I’ve already got all the ingredients out, might as well double the meat and use some for a later meal!!!🙃🙃

    Good Morning! Day late commenting 😆 Tortellini is one of my absolute favorite pastas. It’s the first thing I look for on the menu when I’m at an Italian restaurant Lol.     Yummy, I am looking forward to trying this recipe. I love tortellini! But I no longer hav3 a crockpot, only, y instantly, maybe that works In less time. Has anyone tried it in Instantpot?

    This sounds and looks so good but unfortunately I can’t eat gluten or dairy. I will pass the recipe on to my oldest daughter because I think that her family would love it. However, I do make the Breakfast Quiche recipe that you shared last year on an almost weekly basis. I use dairy free (veggie) cheese and make it ahead on days that I work late. When Troy gets home he puts it into the oven and it is ready when I get home from work. It is one of his favorites. Praying that your whole family is doing well and tell your sweet Mom hello for me 🙂
