SUPER Easy Oreo Icebox Cake

Happy Sunday everyone! I hope your 4th of July week has gone well and full of family, friends, and fun! We had a busy week with landscaping, get-togethers, family, friends and all that good stuff! I am totally messed up with my days, it seems. I was sitting here writing this post out and was thinking everyone should be off to work…well, it’s Sunday, not Monday. Anyone else has days like that? I need a calendar with me at all times now HA!

My brother had fireworks galore!!

We had a huge family celebration at my brother’s house on Friday night that lasted on into the night. Needless to say, Barry nor I am not used to staying out that late and it took a toll on us both. I got up on Saturday to write my post and life was ON from the time my feet hit the ground till 10 PM. Since I am a little behind, for those of you that like the Sunday Inspirational Posts, I will be sending it out a little later today for you.

While I was over at my brother’s house this weekend, my sister-in-law made the BEST cake I think I have ever tasted. Ladies, I’m talking so good that Brooklyn kept scraping her fork over her plate till every bit was gone…I was waiting for her to pick the plate up and lick it! Yes…it was that good! If you have never tasted this very easy icebox cake…put it on your list! It’s a crowd pleaser and you will be bringing home “the” empty dish if you take it to a gathering or serve at a party. I love sharing a great recipe!

This is an easy summer dessert recipe made with only four simple ingredients – chocolate Oreo cookies and homemade, sweetened whipped cream! Cookies and cream that was OHHHHH so good!!!!!!!

Easy Oreo Icebox Cake

INGREDIENTS YOU WILL NEED:

  • 2 packages (15 oz each) Oreo cookies
  • 3 cups heavy whipping cream
  • 3 tablespoons sugar
  • 2 teaspoons vanilla
  • Crushed cookies, chocolate chips, caramel or nuts for topping (optional)

Instructions

  • In a large mixing bowl, beat cream, sugar, and vanilla just until stiff peaks form, about 7-9 minutes.
  • In a 13×9 pan or 3-quart dish, add a single layer of Oreos. Top with 1/3 of the whipped cream. Repeat layers, ending with whipped cream.
  • Cover and refrigerate for at least 6 hours or until cookies are softened. For best results chill overnight.
  • To serve, top with crushed cookies, chocolate chips, caramel or nuts before serving, if desired.

Notes

Homemade whipped cream can be substituted with 24 ounces of whipped topping. To soften cookies faster, dip each one in milk before placing in dish. Proceed with layers as noted above.

    Happy Sunday morning! Boy am I hurting and sore this morning!! Troy and I too have been working on our outside projects. Yesterday we got up early and installed a new post and mailbox. It was so nice and cool after the storms and rain that came through on Friday night so we decided to go hunt for the edging that we needed for the front garden area. Well, by the time we did that and got back home and changed to work outside the heat and humidity was back full force but we pressed on! We got all of the rock cleared out and most of the area raked and cleaned up but we had to quit because we were both so exhausted and hurting. I am surprised that we can even move this morning 🙂 I am like you and I have to mentally stop and think what the heck day is it? I am not used to having so many days off in a row and Troy being home at the same time so I am totally confused as to what day of the week it is. I am glad that you got in some wonderful family time. Thanks so much for the recipe! As you know I especially like to make desserts and this will be a great one to try when the grand babies are here later this month. It looks so simple to make so I think the hard part will be getting them to wait until the next day to eat it! 😉 I hope you have a wonderful day!! Oh, I for got to tell you that Friday we were out shopping and we stopped in at Old Navy and I got 2 new dresses that are so cute and cool! Troy even found some lightweight t-shirts and shorts. This time off has been a great mix of working on home projects and shopping 🙂

      Wow!! You guys have been busy!! It’s so funny you got s new mailbox because that’s on my list too lol!!! I guess I can consider this past week as being my “vacation” because boy did I take time off lol. It was fun ( other than those headaches) and I really enjoyed seeing all my family. I only get to see some of them at Christmas only, so it was nice!! My back is still hurting from all the work we did. Now, I’m turning a little “nook area” into my office. That was a bigger project than what I first thought. I dug my computer out of the mess last night so I could start back working. Sighhhh!! Hopefully that will be complete soon!! I’ve got a couple things ordered and I hope they get here quickly so I can check that off my list. My list has gotten long btw!! Ha!!

    This recipe sounds like Oreo fluff that we make in this area but we eat it as a “salad”.., yep, it’s on salad bars. But… I think we add vanilla pudding with it too and yes, it is lip smacking good. It’s been a lazy few days and I’m ready to get back into routine. Last night we went to a winery where they had 3 people playing and singing and we sat outside enjoying wine and a brat. It was such a beautiful evening and a perfect date night. Yesterday I made a large casserole to take to my cousins house this afternoon as his MIL passed away so visited there and now lazy evening with pizza and a movie!
